Orange is genuinely a quiet drive from Sydney. The airport handles three direct flights a day; the train takes its time but is restful; the road, in autumn, is the recommendation.

Orange sits in three different agricultures at once — the cool-climate cellars, the highland-produce belt, and the granite outdoors of Mt Canobolas. Each of these earns a day to itself.

The volcanic soils around Mt Canobolas grow stone fruit and cool-season vegetables most of the year. Saturday market in the main square is the standing recommendation; on the road, look for honesty-box farm gates.

The graniteoutdoors.

Mt Canobolas is an extinct volcano, the highest point between the Blue Mountains and Perth. Walking trails and bird-of-prey lookouts; Lake Canobolas at the base for the easier morning. Trails handle four-season use.

Spring

The vineyards bud, the trails dry, the kitchen garden's first asparagus arrives. Most balloon flights resume in October. A quiet shoulder, our preferred season for the long walks.

Hot days, cold nights — the elevation cools every evening. Stone fruit at the market, swimming at Lake Canobolas, dinner on the courtyard from six. The busy season for cellar doors.

The case-in-chief. Cellar harvest, the markets at their richest, the deciduous canopy on Summer Street turns rust to ochre to bare. Most experiences peak here; book ahead.

The cellar's quiet season — long lunches, long fires, frost on the vines at 7am. The hotel is at its most still. Bring a coat; the snow on Canobolas is occasional but real.
